Creamy Sweet Carrots

Creamy Sweet Carrots are heavenly. This easy recipe uses only 5 ingredients and can be whipped up in about 15-20 minutes. It's perfect for weeknight dinners when you need to prepare a quick side dish. But it's delicious enough to serve for company or holiday meals. Gluten free.

2 lb. bag frozen crinkle-cut carrots thawed 1/2 tsp. Salt and pepper to taste 2 tbsp. granulated sugar 1/2 stick unsalted butter (1/4 cup) 4 oz. pkg. cream cheese cut in cubes 1/4 cup whipping cream
In a saucepan, melt butter and cream cheese.
Stir with a whisk frequently until cream cheese breaks down.
Add the carrots, granulated sugar, salt and pepper, if desired.
Stir frequently with a wooden spoon so all the ingredients blend well together.
Cook over low heat until carrots are hot and cooked through.
This will take 10-15 minutes.
Add the whipping cream and stir thoroughly.
NOTE: I have used either half-and-half or heavy whipping cream. Although my personal preference is heavy whipping cream.
