Deliciously flavored Fried Potatoes is an old-fashioned recipe based on the way my Grandma used to prepare potatoes. It's wonderful for breakfast or as a side dish. We like to serve it for big country-style weekend breakfasts or holiday breakfasts. It's sumptuous comfort food as well as being hearty, filling and satisfying. Gluten free.
6-8medium to largered potatoescubed, or about 4 pounds Russet potatoes, peeled and cubed
1/2bell pepperany color
3-4green onionssliced or 1/2 cup diced red onion or yellow onion
1stickunsalted butter(1/2 cup) or substitute avocado oil or lard
1/2 to 1tsp.garlic saltor more, as desired
1/2 to 1tsp.pepperor more, as desired
1/2 to 1tsp.paprikaor more, as desired
1/2 to 1tsp.dill weedor more, as desired
1tsp.parsleyor more, as desired
1tsp.chivesor more, as desired
1/8tsp.rosemaryor more, as desired
Instructions
Place butter in a large skillet and melt on medium heat.
Add potatoes, bell pepper and green onions.
Sprinkle seasonings on potatoes in amounts desired.
Sauté potatoes in skillet covered with lid
Turn potatoes with spatula every 5 minutes to make sure potatoes don’t scorch.
Recover with lid each time.
Continue cooking until potatoes are cooked through and fork-tender.
(Depending on the heat about 25-30 minutes or so).
Notes
NOTE: While I mix and match the seasonings sometimes, I usually add all of the seasonings listed here. I highly recommend you don't leave out either the paprika or the dill weed because they provide such wonderful, savory flavors.NOTE: Substitute avocado oil for the butter if you're trying to keep the recipe vegan.NOTE: Grandma made her fried potatoes with onions, salt, pepper and lard. She sliced her potatoes.
