Healthy Blueberry Banana-Nut Bread

Lovely breakfast bread that's made with whole grains, honey, pecans, blueberries and bananas, and is a healthy option compared to most sweet breads. Terrific for a company or holiday breakfast.

1 stick unsalted butter softened (1/2 cup) 1 cup honey 2 large eggs 4 large overripe bananas mashed 2 cups soft white wheat berries, ground into flour all purpose unbleached will do or a pastry flour 3/4 cup whole wheat flour 1/4 cup ground flaxseeds 1 cup chopped walnuts or pecans, but any kind will do 10 oz. fresh blueberries or 12-oz. frozen blueberries 1/2 tsp. sea salt or kosher salt 1 tsp. baking powder 1 tsp. baking soda
Mix butter, honey, eggs, bananas, baking powder, salt, and baking soda with an electric mixer until well mixed.
Stir in flour, wheat flour, flaxseeds, walnuts or pecans, and blueberries with a wooden spoon until combined.
Pour into 4 miniature loaf pans that have been sprayed with Baker’s Joy cooking spray.
Bake at 350° for 1 hour to 1 hour 15 minutes or until a knife inserted into center of bread comes out clean.
Each miniature loaf yields about 6 slices.
NOTE: Start checking for doneness at one hour. Your oven may cook faster than mine.
