The basting sauce is ready in only a couple of minutes and then the chicken leg quarters are slow-cooked until juicy and tender. This healthy, low calorie, gluten free entree is mouthwatering and a great way to enjoy less expensive cuts of meat.
In a small bowl, whisk olive oil, orange juice, honey and paprika until thoroughly combined.
Arrange chicken pieces on a large platter.
Brush chicken pieces generously with honey mixture.
Grill chicken over low to medium heat turning chicken every 10-15 minutes and basting with honey mixture each time.
Grill about 30-60 minutes (depending on the heat of the gill), until juices run clear.
Internal temperature should reach 165º.
Remove to clean serving platter to serve.

NOTE:To cook in oven: Preheat oven to 425º. Place basted chicken pieces in baking dish and bake 30-45 minutes until done and juices run clear. Turn chicken every 10-15 minutes, basting with sauce each time.
