You'll be captivated from the first bite of this delicious Mandarin Cashew Tossed Salad recipe. This Tossed Salad includes mandarin orange segments, fresh pineapple, blueberries, strawberries and Honey Roasted Cashews. The tasty Honey Lime Dressing complements the salad perfectly. Layer with mandarin oranges, red bell pepper, celery, cucumber, red onion, pineapple, strawberries, blueberries and cashews.
Refrigerate until ready to serve. (See note below).
HONEY LIME DRESSING:
Grate enough lime peel to measure one teaspoon; set aside.
Combine all of the dressing ingredients in a blender.
Purée about 30 seconds until smooth.
Drizzle salad dressing over individual salad plates or combine with salad.
Serve.
Notes
NOTE: If you need to refrigerate the salad longer than 30 minutes, it’s best to add the cashews just before serving, instead of with the salad ingredients at the beginning of the recipe to keep the nuts crunchy.
