You'll be captivated from the first bite of this delicious Mandarin Cashew Tossed Salad recipe.   • 1 grater
  • 1 cutting board
  • 1 vegetable peeler
  • 1 fork
  • measuring cups
  • measuring spoons
  • 1 blender

Ingredients
  

SALAD:

  • 12 oz. pkg. spring mix
  • 1 cup arugula
  • 22 oz. can mandarin orange segments drained (two 11-ounce cans)
  • 1 medium red bell pepper chopped
  • 2 ribs celery diced
  • 1 medium cucumber peeled and edges tined with a fork
  • 1/4 cup red onion finely diced
  • 1 cup honey-roasted cashews
  • 2 cups fresh pineapple peeled and chunked
  • 2 cups strawberries washed and sliced
  • 1 cup blueberries washed

HONEY LIME DRESSING:

  • 1/2 cup avocado oil
  • 1/2 cup honey
  • 1 tsp. ground mustard
  • 1 tsp. lime peel grated
  • 1/2 tsp. paprika
  • 1/4 tsp. sea salt
  • 1/8 tsp. ground white pepper

Instructions
 

SALAD:

  • In a large salad bowl combine the lettuces.
  • Layer with mandarin oranges, red bell pepper, celery, cucumber, red onion, pineapple, strawberries, blueberries and cashews.
  • Refrigerate until ready to serve. (See note below).

HONEY LIME DRESSING:

  • Grate enough lime peel to measure one teaspoon; set aside.
  • Combine all of the dressing ingredients in a blender.
  • Purée about 30 seconds until smooth.
  • Drizzle salad dressing over individual salad plates or combine with salad.
  • Serve.

Notes

NOTE: If you need to refrigerate the salad longer than 30 minutes, it’s best to add the cashews just before serving, instead of with the salad ingredients at the beginning of the recipe to keep the nuts crunchy.
