Mango Poppyseed Dressing

This amazing salad dressing uses ataulfo mangos, Greek yogurt, honey, apple cider vinegar, avocado oil and poppyseeds. It's easy to make and a delicious gluten free, low calorie, healthy and clean-eating recipe. Serve over your favorite tossed salad.

1/2 cup avocado oil 2 cups plain Greek yogurt or Icelandic yogurt 1/2 to 2/3 cup honey as desired 1/4 cup apple cider vinegar 2 mangos peeled and diced 1 tbsp. poppyseeds
Place all ingredients in a blender and puree until smooth – about 20 seconds.
Adjust honey and poppyseeds by adding more, if desired.
Drizzle dressing over top of individual salad plates.
Yield: About 1 quart.
NOTE: I served this salad dressing with Mango Berry Salad.
