Maple Bacon Sweet Potatoes

These amazing sweet potatoes are chocked full of bacon. Then they're lightly seasoned with cinnamon and maple syrup. This easy four-ingredient recipe is terrific as a side dish or for a country-style breakfast. Gluten free.

Equipment

  • 1 large skillet with lid or cast iron skillet with lid
  • 1 sharp knife to cut vegetables
  • 1 vegetable peeler
  • measuring spoons
  • 1 wooden spoon or spatula (or both)

Ingredients
  

  • 4 medium-sized sweet potatoes peeled and diced evenly
  • 1 lb. bacon diced into bite sized pieces
  • 3/4 tsp. cinnamon
  • 1 tsp. Salt and pepper to taste
  • 2 tbsp. maple syrup

Instructions
 

  • Heat a cast iron skillet over medium heat.
  • Add the bacon and sauté until crisp.
  • This will probably take 10-15 minutes.
  • Meanwhile, peel and dice sweet potatoes.
  • Set aside.
  • Remove bacon to a paper towel-lined plate.
  • Add sweet potatoes to bacon grease in skillet.
  • Sprinkle with cinnamon, salt and pepper.
  • Sauté 15-20 minutes with lid covered, or until tender.
  • Add bacon back into skillet.
  • Drizzle sweet potatoes with maple syrup.
  • Stir to combine.

Notes

NOTE: While it may seem odd to add the sweet potatoes to a skillet without removing the bacon grease, the potatoes tasted wonderfully and did not stick to the skillet while frying.
