Molasses Date Sandwich Cookies are the ultimate in rich, decadent cookies for the holiday season. These cookies are filled with molasses, spices and dates and have a thick vanilla frosting sandwiching the two cookies together. These cookies will cure any sweet tooth craving and are perfect for any holiday get-together, office party, Christmas Cookie Exchange or tailgating party.
Scoop cookie dough with a large cookie scoop and press dough firmly into scoop.
Place cookie dough onto greased baking sheets or baking sheets sprayed with cooking spray.
Bake at 350° for 18-19 minutes.
Rotate cookie sheets on racks every nine minutes while baking.
Allow cookies to cool completely before adding icing.
Transfer to wire cooling racks.
Spread a few tablespoonfuls of icing on the bottom of one cookie and top with another cookie of similar shape and size.
Notes
NOTE: I sprayed the cookie scoop with cooking spray frequently while scooping out the dough.NOTE:To sour milk: Add 1 ½ tbsp. white vinegar to 2/3 cup milk and let stand for 5-10 minutes. Use in recipe as directed.
