Peach Doodles will cure any sweet tooth craving. These lovely cookies combine peaches and cinnamon with macadamia nuts for spectacular flavor and crunchy texture. They'll make your mouth water from the first bite. Great tailgating recipe.

1 large mixing bowl
1 wooden spoon

1 sharp knife to cut, peel and pare peaches
1 nut chopper if nuts are not previously chopped
1 large cookie scoop
1 spatula
2/3 cup unsalted butter 1 cup granulated sugar 1 large egg 1 tsp. vanilla extract 2 1/2 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods 2 1/4 tsp. cinnamon 1 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt 2 cups peaches peeled and finely diced 3/4 cup macadamia nuts chopped
In a large bowl, cream butter and sugar, egg, vanilla, cinnamon, baking powder, baking soda and salt until fluffy.
Stir in the flour, peaches and macadamia nuts until well combined.
Mixture will be dry.
Scoop dough with a large cookie scoop and place 3-inches apart onto lightly greased baking sheets.
Bake at 350˚ for 15-20 minutes or until golden brown.
Rotate cookie sheets on oven racks every six to seven minutes of baking time.
Remove to wire racks to cool.
NOTE: Each oven is different. Your oven may bake these cookies more quickly. Check after 10 minutes.
