  • 10 oz. pkg. hearts of romaine salad mix or other salad mix
  • 11 oz. can mandarin orange segments drained
  • 1 cup lightly salted cashews
  • 3/4 cup sharp cheddar cheese shredded
  • 3/4 cup smoked Swiss cheese shredded
  • 2/3 cup dried cranberries
  • 3/4 cup poppy seed dressing

  • Layer salad mix in a bowl.
  • Top with mandarin oranges, cashews, cheddar cheese, swiss cheese and cranberries.
  • Refrigerate until ready to serve.
  • Toss salad.
  • Drizzle with salad dressing to coat.
  • Serve immediately.

NOTE: You can also toss the salad and serve the salad dressing on the side; but I would not toss the salad unless you are feeding about 10 people at the same time.
NOTE: I used a combination of Butter Bliss and Green Leaf lettuces.
NOTE: I used Brianna’s Poppy Seed Dressing.
