Chocolaty Peanut Butter Cookies are breathtaking! These amazing Peanut Butter Cookies are loaded with two bags of miniature chocolate chips. Equipment

  • 2 18x26" cookie sheet pans
  • 1 large mixing bowl
  • 1 wooden spoon
  • 1 electric mixer
  • 1 spatula
  • 1 1/4 cup cookie scoop
  • measuring cups
  • measuring spoons

Ingredients
  

  • 1 cup salted butter softened (2 sticks)
  • 1 cup crunchy peanut butter
  • 3/4 cup light brown sugar packed
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 1/2 tsp. real vanilla extract no substitutes
  • 2 1/2 cups UNBLEACHED all-purpose flour (Bleached flour toughens baked goods)
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. sea salt
  • 24 oz. bag miniature chocolate chips (two 12-ounce bags)

Instructions
 

  • Preheat oven to 350 degrees.
  • Cream butter, peanut butter, sugars, eggs, baking soda, baking powder, salt and vanilla in a large mixing bowl with an electric mixer until fluffy.
  • Add flour and miniature chocolate chips.
  • Stir until thoroughly combined; this may take 4-5 minutes.
  • Scoop cookie dough with a large cookie scoop and place on greased baking sheets.
  • (I usually pack the dough into the cookie scoop and level off).
  • Bake 12 to 15 minutes or until lightly browned.
  • Rotate cookies on racks every 7-8 minutes of baking time.
  • Cool completely.

Notes

NOTE: When I was baking two racks at a time, my cookies took 25-26 minutes to bake. Smaller cookies won’t take so long to bake.
 
NOTE: Stir ingredients really well. These are not muffins! The cookie dough needs to be stirred until every morsel is no longer floury-looking.
