You'll swoon over these luscious Snickers Surprises. These scrumptious Peanut Butter Cookies are filled with Snickers Bars so they include additional Peanut Butter, caramel nougat and chocolate. They are rich, decadent and heavenly. These drool-worthy cookies are wonderful for tailgating parties, potlucks, backyard BBQs, holiday baking and Christmas Cookie Exchanges. But be warned! These cookies are addictive. You won't be able to stay out of them!

Equipment

  • 2 18x26" cookie sheet pans
  • 1 large mixing bowl
  • 1 wooden spoon
  • 1 electric mixer
  • 1 spatula
  • 1 sharp knife to chop Snickers bars
  • 1 1/4 cup cookie scoop
  • measuring cups
  • measuring spoons

Ingredients
  

  • 1 cup salted butter softened
  • 1 cup crunchy peanut butter
  • 3/4 cup granulated sugar
  • 3/4 cup light brown sugar packed
  • 2 large eggs
  • 1 1/2 tsp. real vanilla extract no substitutes
  • 2 1/2 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 tsp. sea salt
  • 3 cups Snickers Bars chopped (nine 1.8-oz. bars)

Instructions
 

  • Preheat oven to 350 degrees.
  • Cream butter, peanut butter, sugars, eggs, baking soda, baking powder, salt and vanilla in a mixing bowl with an electric mixer until fluffy.
  • Add flour and chopped Snickers Bars.
  • Stir until very well mixed; this may take 4-5 minutes.
  • Scoop cookie dough with a large cookie scoop and place on greased baking sheets.
  • Bake 12 to 15 minutes or until lightly browned.
  • Rotate cookies on racks every 6 to 7 minutes of baking time.
  • Cool completely.

Notes

NOTE: When I was baking two racks at a time, my cookies took 25 minutes to bake. Smaller cookies won’t take so long to bake.
 
NOTE: Stir ingredients really well. These are not muffins! The cookie dough needs to be stirred until every morsel is no longer floury-looking.
