Bacon Tomato Avocado Salad

Bacon Tomato Avocado Salad is so wonderful. This outrageously good salad includes bacon, tomatoes, avocados, mild pepper rings and two cheeses along with a Cole Slaw Salad Dressing. It's absolutely heavenly and so perfect for company dinners, backyard barbecues, potlucks or any other family gathering. This mouthwatering salad combines savory, sweet and tart flavors in a delightful way. If you want to amp up your salad repertoire, this is the way to do it!

Equipment

  • 1 large salad bowl with tongs
  • 1 skillet
  • 1 sharp knife to cut vegetables
  • measuring cups

Ingredients
  

  • 24 oz. pkg. iceberg lettuce salad
  • 10 oz. container grape tomatoes halved lengthwise
  • 1/2 cup mild banana pepper rings drained and patted dry with paper towels
  • 1 large cucumber quartered and sliced
  • 3 medium avocados peeled, pit removed, sliced
  • 3/4 cup Monterey Jack cheese shredded
  • 3/4 cup sharp Cheddar cheese shredded
  • 12 slices thick-cut bacon cooked and broken into one-inch pieces
  • 13 oz. container Lite House Cole Slaw Dressing

Instructions
 

  • Cook bacon in large skillet over medium heat.
  • Be sure to not cook at too high a temperature or too long so that the bacon scorches!
  • Remove bacon to a paper towel-lined plate to drain.
  • Once cooled, crumble bacon into one-inch-sized pieces.
  • Set aside.
  • Place salad mix into a bowl.
  • Layer tomatoes, mild pepper rings, cucumber, avocados and cheeses on top.
  • Top with bacon pieces.
  • Add cole slaw dressing and serve.
  • If not serving immediately, refrigerate before adding dressing; add dressing just before serving.

Notes

NOTE: You can prepare the salad with everything but the avocados and Cole slaw dressing. Refrigerate. Right before serving add sliced avocados and Cole slaw dressing. Toss ingredients before serving.
 
NOTE: You can use all of the salad dressing if you prefer a moist salad. You may find about 10-ounces will be enough.
