Pineapple Casserole

Pineapple Casserole is so mouthwatering it will rock your world! This amazing side dish uses only six ingredients, but they sure pack a powerful punch. The combination of savory and sweet with the pineapple, cheddar cheese and Ritz Cracker crumbs is absolutely irresistible. This is a terrific casserole for company or holiday dinners like Thanksgiving, Christmas, Mother's Day or Father's Day. Every time we make this deep-south casserole everyone raves over it and goes back for seconds.

Equipment

  • 1 9x9" glass baking dish
  • 1 mixing bowl
  • measuring cups
  • measuring spoons
  • 1 Rolling Pin to crush crackers (or just crush them in your hands)
  • 1 wooden spoon
  • 1 small bowl
  • 1 fork

Ingredients
  

FILLING:

  • 40 oz. can pineapple chunks undrained (two 20 ounce cans)
  • 10 tbsp. flour
  • 1/2 cup granulated sugar
  • 12 oz. pkg. sharp cheddar cheese shredded

TOPPING:

  • 3/4 cup real salted butter melted (1 1/2 sticks)
  • 2 sleeves Ritz crackers crumbled (see note below)

Instructions
 

FILLING:

  • Combine pineapple, flour, cheddar cheese and granulated sugar in a mixing bowl.
  • Spread into a greased 9x9” glass casserole dish.

TOPPING:

  • Combine topping ingredients and sprinkle evenly over top of casserole.
  • Bake at 350° for about 30 minutes or until topping is golden brown.

Notes

NOTE: Ritz crackers has changed the amounts of the crackers in the individual sleeves and decreased the amount in each sleeve by about an ounce. Add additional crushed crackers if you desire.
 
NOTE: I usually crush the crackers in my hands rather than dragging out the rolling pin!
