Porky Pig Breakfast Skillet is awesome. Make your own breakfast skillets with this fantastic recipe. The recipe includes hash browns, two cheeses, ham, bacon and sausage along with two eggs on top. It's seasoned wonderfully and so hearty and filling that you can get two meals out of one skillet! This is a completely satisfying and delightful breakfast idea especially for weekend breakfasts. Equipment

  • 1 serving skillet or microwaveable glass dish
  • 1 spatula
  • 1 non-stick skillet or griddle
  • 1 hamburger chopper to cut sausage down in small pieces while frying
  • measuring cups

Ingredients
  

  • 2 cups frozen hash browns thawed (I usually did not thaw the potatoes)
  • 3 tbsp. unsalted butter divided use
  • 1/8 tsp. sea salt divided use
  • 1 dash ground black pepper divided use
  • 1/8 tsp. dried parsley divided use
  • 1/8 tsp. dried rosemary divided use
  • 1/3 cup Monterey Jack cheese shredded
  • 1/3 cup sharp Cheddar cheese shredded
  • 1/3 cup cooked bacon crumbled
  • 1/3 cup cooked sausage broken into small bits
  • 1/3 cup diced ham
  • 2 large eggs

Instructions
 

  • Melt two tablespoons butter in a non-stick skillet or griddle.
  • Add hash browns and sauté in butter.
  • Season with a sprinkle of salt, pepper, dried parsley and rosemary.
  • Cook potatoes until bottom is well browned.
  • Turn hash browns over and cook remaining side.
  • Transfer hash browns to a serving skillet or microwavable glass dish; set aside.
  • Meanwhile, fry sausage in skillet or griddle.
  • Use a hamburger chopper to reduce the sausage to very small pieces.
  • If necessary, drain sausage on paper towel-lined plate; set aside.
  • Stack bacon slices on top of each other.
  • Cut bacon in half lengthwise, then in ¼-inch pieces.
  • Fry bacon until done.
  • Remove to paper towel-lined plate to absorb excess grease.
  • Set aside.
  • To serving skillet with hash browns, (or microwavable glass dish), sprinkle cheeses over top of hash browns.
  • Then spread cooked meats over top.
  • Place in oven at 350° for about 5-7 minutes while eggs cook, (or microwave about 30 seconds or so right before eggs are done).
  • Meanwhile, in a separate non-stick skillet or griddle, fry two eggs (sunny-side up) in about a half tablespoon of butter until cooked.
  • Season eggs with a sprinkle of salt, pepper, parsley and rosemary.
  • Remove skillet from oven (or microwave about 30 seconds in glass dish).
  • Slide eggs, sunny-side up over top of meats.
  • Serve immediately.

Notes

NOTE: If you’re on a time crunch, it is easier to prepare the sausage and bacon in advance. Then add as needed and heat as described above.
 
NOTE: You can also pre-cook the hash browns. Use as directed in recipe.
 
NOTE: I recommend using either a non-stick skillet or griddle for this recipe. If you try to make more than one serving, it is easier to pre-cook the potatoes and meats.
 
NOTE:  This is enough for one very hearty appetite. You may find that you get two servings out of each skillet, instead of merely one.
 
NOTE: My potatoes were frozen. If your potatoes are thawed, they won't take quite as long to cook.
 
NOTE: Since this recipe is quite involved, I highly recommend you read through the directions and follow my step-by-step pictures in this post to get the best results.
