Easy No Knead Dinner Rolls

Easy No Knead Dinner Rolls are fantastic. These easy dinner rolls use only 6 ingredients and are kneaded in the breadmaker so there's no kneading or mixing! We enjoy eating these delicious and heavenly dinner rolls for family, company or holiday dinners. If you enjoy fresh homemade bread or rolls, these are terrific with a bowl of chili or soup too. Beware! These amazing dinner rolls are addictive. Don't be surprised if your family and friends beg you to make them all the time!

Equipment

  • 1 9x13" glass baking dish
  • 1 breadmaker
  • 1 pastry brush
  • measuring cups
  • measuring spoons
  • 1 small microwaveable bowl to melt butter

Ingredients
  

  • 1/4 cup salted butter cut in slivers (1/2 stick)
  • 1 1/2 cups half-and-half or whole milk, warmed
  • 4 cups bread flour or all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 tbsp. sea salt (1 1/2 teaspoons)
  • 2 tsp. active dry yeast or bread machine yeast

Instructions
 

  • For best results, please read all the notes below before starting.
  • Layer ingredients in bread canister in order given.
  • Slice butter into slivers and place in bread canister. (If the butter is already softened you can just toss it into the breadmaker in one piece).
  • Warm half-and-half or whole milk in the microwave one to two minutes until milk is warmed.
  • Pour into bread canister.
  • Then add bread flour, granulated sugar, salt and yeast.
  • Place on dough setting of bread maker.
  • This will take approximately 1 ¾ hours.
  • Remove dough from bread canister and divide evenly into 12 sections.
  • Roll each section into a ball and place in a rectangular baking dish greased well with butter.
  • Stretch and roll the dough to smooth out the tops.
  • Brush rolls with a tablespoon or two of melted butter.
  • Put in a warm place until the rolls expand, about an hour and a half. (See tips below).
  • Bake at 350° for 17-20 minutes or until rolls are no longer doughy in the middle. (See note below).
  • Remove from oven and brush with melted butter again before serving.

Notes

NOTE: For best results, do not use less percentage of fat than whole milk in this recipe.
 
NOTE: While you can use any kind of yeast including bread machine yeast, I do not recommend any other brand of yeast than Fleishmann’s. Those other brands have a tendency to fail.
 
NOTE: I usually warm the milk in the microwave at 50% power for 1 minute 15 seconds to 1 minute 30 seconds.
 
NOTE: To smooth the tops from wrinkles, keep stretching the dough and tuck the wrinkled parts under the bottom of the roll (where they won’t show).
 
NOTE: To raise the rolls: I turn the oven on 350° for exactly one minute. Turn off heat and slide pan of rolls into the oven (uncovered). After 20 minutes, heat the oven again for one minute. Turn off oven. Repeat again every 20 minutes and allow rolls to continue raising until they reach the top edge of the pan. The rolls should warm in the oven for approximately 1 hour 30 minutes to get the dough to raise sufficiently. (Sometimes it takes 2 hours!) That is usually enough time for the rolls to be raised enough and fill the pan. Then begin baking. Turn oven on 350° and set timer for 25 minutes. The rolls are usually finished baking by that time, but check to make sure the rolls in the middle are no longer doughy. Then remove from oven.
 
NOTE: If the oven is preheated, the rolls will bake in about 17-20 minutes. But always check one of the inside rolls to see if it's cooked and not still doughy. It will be firmer to the touch when the roll is done.
