Georgia Chili is one of the most amazing chili recipes I've ever eaten! This fantastic recipe is easy to whip up and not overly spicy so it's kid-friendly and great for weeknight dinners. The thick texture is beyond wonderful. This mouthwatering recipe is excellent served with Fritos or tortilla strips, cheddar cheese and sour cream. It's an irresistible chili dish that's marvelous comfort food for cold winter days.

2 tbsp. bacon drippings (or use olive oil or avocado oil) 1 large onion diced 2 1/4 lbs. lean ground beef (the original recipe called for 1 pound) 30 oz. can petite diced tomatoes undrained (two 15-ounce cans) 6 oz. can tomato paste 1 tsp. sea salt 1 tsp. granulated sugar 1/8 tsp. red pepper flakes 1/8 tsp. paprika 1/8 tsp. garlic salt 3/4 to 1 tbsp. chili powder (dissolved in a little water) 1 bay leaf 27 oz. can chili beans with mild sauce (or a 16-oz. can chili pinto beans)
Brown onion in bacon grease in large Dutch oven.
Add ground beef and cook until no longer pink.
Use a hamburger chopper and break meat down into small pieces while frying.
Add remaining ingredients except the beans.
Cover with lid and simmer for one hour, stirring occasionally.
Add chili beans and heat through.
If mixture seems too thick, dilute with a little water.
Serve chili with Fritos or Tortilla Strips, sour cream and cheddar cheese, if desired.
NOTE: The flavor is really better if you can start with bacon grease.
