Cherry Pineapple Nut Bread is absolutely superb. This fantastic sweet bread includes red and green candied cherries and red, green and gold candied pineapple. It's iced with a luscious cherry icing and the texture and taste is so wonderful that everyone will want seconds. This nut bread is marvelous for holiday baking or holiday breakfasts like Thanksgiving, Christmas or New Year's Day.
Wipe candied fruit with wet paper towels to remove excess syrup.
Set aside.
Whisk granulated sugar, butter, egg, almond extract and half-and-half in a large mixing bowl.
Add dry ingredients and nuts and stir to combine.
Gently add cherry pineapple mix.
Mixture will be thick.
Pour into a 9x5” greased and floured loaf pan, or three miniature loaf pans.
Bake a 9x5" loaf pan at 350° for 65 minutes or until a knife or bamboo skewer inserted in center comes out clean.
Cool completely before drizzling icing over top of bread..
Spread with cream cheese to serve.
ICING:
Whisk ingredients in a small mixing bowl to combine.
Drizzle icing over bread.
Allow icing to set up about 15 minutes before slicing.
Slice bread down with an electric knife just before serving.

NOTE: This fruit mixture contains red and green cherries, and red, green and gold pineapple pieces.NOTE: For miniature baking pans, bake approximately 55-60 minutes. Check with toothpick or bamboo skewer to see if it comes out clean before removing from oven. NOTE: An electric knife cuts this bread more evenly and easily without tearing the bread apart, versus a regular knife.
