Rosemary Romano Chicken is irresistible and so mouthwatering. This delightful chicken entree is oven ready in about 5-10 minutes! Uses gluten free bread crumbs, Romano cheese, Italian seasoning, garlic and rosemary for a succulent and savory taste you're sure to enjoy. Terrific for weeknight or company dinners.

Equipment

  • 1 10x15" glass baking dish
  • 1 small bowl
  • 1 wooden spoon or whisk
  • measuring cups
  • measuring spoons
  • 1 spatula

Ingredients
  

  • 4 chicken breasts boneless, skinless
  • 2 tbsp. olive oil
  • 2 cloves garlic minced
  • 1/4 cup dry 4C gluten free Italian-Style bread crumbs can use regular bread crumbs
  • 1/2 cup Romano cheese shredded
  • 1/2 tsp. Italian seasoning
  • 1/2 to 2/3 tsp. dried rosemary (use less if using fresh)
  • 3/4 tsp. sea salt
  • 1/2 tsp. ground black pepper
  • 1/2 cup Romano cheese shredded

Instructions
 

  • Preheat oven to 350°.
  • Spray a 10x15" baking dish with olive oil cooking spray.
  • In a small bowl, stir olive oil and garlic; set aside.
  • On a plate, combine gluten free bread crumbs, ½ cup shredded Romano cheese, rosemary, salt, pepper and Italian seasoning.
  • Dredge chicken pieces in the bread crumb/cheese mixture.
  • Pat crumbs into the chicken to adhere.
  • Place breaded chicken pieces in baking dish and drizzle with olive oil/minced garlic mixture.
  • Bake about 1 hour.
  • Sprinkle remaining ½ cup Romano cheese over top of each chicken breast.
  • Bake an additional 5-8 minutes until cheese melts.
  • Garnish with sprigs of fresh rosemary.

Notes

NOTE: You can use either gluten free bread crumbs or regular bread crumbs for this recipe.
