Blackberry Almond Bars are outrageously delicious! These fabulous bar-type cookies have a shortbread crust, topped with a blackberry preserve filling and sliced almonds. They are melt-in-your-mouth good and irresistible for young and old alike. These are great treats for tailgating parties, potlucks, backyard barbecues and holiday baking.

Equipment

  • 1 9x13" glass baking dish
  • 2 mixing bowls
  • 1 wooden spoon
  • 1 whisk
  • 1 spatula
  • measuring cups
  • measuring spoons

Ingredients
  

CRUST:

  • 1 1/2 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
  • 3/4 cup confectioners’ sugar
  • 3/4 cup unsalted butter softened or melted

TOPPING:

  • 1 large egg slightly beaten
  • 1/2 cup granulated sugar
  • 8 to 10 ounces blackberry preserves
  • 1 tbsp. unsalted butter softened or melted
  • 1/2 tsp. real vanilla extract
  • 3/4 to 1 cup almonds sliced, as desired

Instructions
 

CRUST:

  • In a mixing bowl, stir flour, granulated sugar and butter.
  • Spread into the bottom and ½ inch up the sides of a 9x13” glass baking dish that has been sprayed well with cooking spray.
  • Bake at 350° oven for 15-18 minutes or until lightly browned.

TOPPING:

  • For topping, beat egg, sugar, preserves, butter and vanilla in a mixing bowl until smooth.
  • Spread evenly over hot crust.
  • Sprinkle with almonds.
  • Bake at 350° for 15-20 minutes.
  • Cool completely before cutting into bars.

Notes

NOTE: These bars are much easier to cut if you freeze for one hour or refrigerate a couple of hours before serving.
