Rainbow Chip Blondies are absolutely scrumptious! These heavenly cookies are filled with Rainbow Chips so they have all the colors of the rainbow, plus they're huge on taste.   • 1 11x17" jelly roll pan
  • 1 large mixing bowl
  • 1 wooden spoon
  • 1 electric mixer
  • 1 spatula
  • measuring cups
  • measuring spoons

Ingredients
  

  • 1 1/2 cups unsalted butter softened
  • 1 1/2 cups light brown sugar firmly packed
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 2 tsp. vanilla extract
  • 4 1/2 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
  • 1 1/2 tsp. baking soda
  • 1 tsp. sea salt
  • 20 oz. pkg. Yum-Mallow Rainbow Chip Morsels divided use (two 10-ounce packages)

Instructions
 

  • Preheat oven to 350°.
  • Grease or spray an 11x17” jelly roll pan with cooking spray.
  • In large bowl, combine butter, sugars, vanilla, eggs, salt and baking soda.
  • Beat at medium speed with an electric mixer until fluffy.
  • Stir in flour and 1 ½ cups Rainbow Chip morsels with a wooden spoon until combined.
  • Stir thoroughly; this may take 4-5 minutes.
  • Press dough into prepared cookie sheet.
  • Sprinkle remaining ½ cup of Rainbow chips over top.
  • Bake for 30-40 minutes at 350°, or until lightly browned and a toothpick inserted in center comes out clean.
  • Cool completely before cutting blondies into bars.
