Pepperoni Caesar Salad

Pepperoni Caesar Salad is a really amped up version of traditional Caesar Salad. Pepperoni adds so much flavor and texture to this great salad. It's the perfect accompaniment for pasta dishes or pizza. Plus, it can be whipped up in 10 minutes or less. It's great for quick weekend meals when you're busy with kid's sporting activities or games.

Equipment

  • 1 large salad bowl with tongs
  • 1 blender
  • measuring cups
  • measuring spoons

Ingredients
  

SALAD:

  • 8 cups Romaine lettuce torn into bite sized pieces
  • 1 cup pepperoni sliced
  • 3/4 to 1 cup Parmesan cheese grated
  • 1/4 tsp. cracked black pepper
  • 1 1/2 cups Caesar croutons

CAESAR DRESSING:

  • 3/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 tbsp. Hellmann's mayonnaise
  • 4 cloves garlic finely minced
  • 1 tsp. Dijon mustard
  • 1/2 tsp. Worcestershire sauce

Instructions
 

SALAD:

  • In large bowl, combine ingredients and toss with Caesar Dressing.

CAESAR DRESSING:

  • Combine ingredients in a blender until emulsified.

Notes

NOTE: Pepperoni freezes really well. Thaw a few minutes before using in recipes.
