Caesar Pasta Salad is a delightful variation on the traditional Caesar Salad. It includes bow-tie pasta and lots of freshly grated Parmesan cheese. This one has an easy homemade salad dressing and can be made up quickly. It's a terrific side dish for potlucks, backyard barbecues or summer holiday fun.
4oz.dry bow tie pastaor rotini pasta, cooked and drained
3cupstorn Romaine lettuce
1/4tsp..Cracked black pepperfor garnish, if desired
1/3cupParmesan cheesefreshly grated, for garnish, if desired
1cupCaesar croutonsfor garnish, if desired
Instructions
Cook pasta according to package directions.
Drain in colander.
Run cold water over pasta to stop enzymatic processes and to prevent the noodles from continuing to cook.
Mix Miracle Whip, cheese and garlic in a large bowl with a whisk.
Add pasta; toss lightly.
Refrigerate until cold.
Stir in Romaine lettuce.
Serve with cracked black pepper, if desired.
Garnish with additional parmesan cheese and Caesar croutons, if desired.
Notes
NOTE: I quadrupled the recipe using 2 cups Miracle Whip, 1 cup Parmesan cheese, 2 teaspoons garlic powder, 16-oz. dry bow tie pasta and three-fourths of a 10-oz. bag Romaine lettuce.
