Almond Joy White Chocolate Cookies

Experience the ultimate in rich and decadent chocolate cookies with these amazing Almond Joy White Chocolate Cookies. They're loaded with chocolate chips, white chocolate chips, almonds and coconut. They'll make you think of Almond Joy Bars with every bite. Because they start with a cake mix they're really easy to whip up. Equipment

  • 2 18x26" cookie sheet pans
  • 1 large mixing bowl
  • 1 wooden spoon
  • measuring cups
  • 1 spatula

Ingredients
  

  • 15.25 oz. box Betty Crocker Triple Chocolate Fudge Cake Mix
  • 1/2 cup canola oil or vegetable oil or avocado oil
  • 2 large eggs
  • 11.25 oz. pkg. white chocolate chips NOT vanilla chips
  • 1 cup coconut
  • 1/2 cup almonds sliced, (see note below)

Instructions
 

  • Preheat oven to 350 degrees.
  • Combine cake mix, oil and eggs.
  • Stir in white chocolate chips, coconut and almonds.
  • Spray cookie sheets with cooking spray.
  • Roll cookies into balls or scoop cookie dough with a scoop and place on prepared baking sheets.
  • Bake at 350° for 13-15 minutes or until done.
  • Rotate cookie sheets on oven racks every seven minutes while baking.
  • Cool completely.

Notes

NOTE: Because I was baking three racks of cookies at once, my cookies took 18 minutes to make. I also rotated the trays every eight minutes.
 
NOTE: These cookies must be rotated during baking or the white chocolate chips will brown on the top rack.
 
NOTE: I found it easier to keep my hands moist while rolling cookie dough into balls.
 
NOTE: I recommend only using ½ cup almonds. I used 1 cup but it's too much and you will not be able to get all of the almonds into the cookies.
 
NOTE: There were a lot of white chocolate chips at the bottom of the bowl that did not get worked into the dough. I placed those on the top of the cookies.
 
NOTE: Be sure to use true white chocolate chips. Most stores only carry white or vanilla chips. They are not the same. In the Dallas area the only two stores that carry white chocolate chips are Kroger and Trader Joe’s.
