Equipment

  • 1 11x17" jelly roll pan
  • 1 large mixing bowl
  • 1 electric mixer
  • 2 wooden spoons
  • 1 spatula
  • measuring cups
  • measuring spoons
  • 1 sauce pan
  • 1 wet knife to spread icing

Ingredients

BROWNIES:

  • 1/2 cup unsalted butter softened (1 stick)
  • 1 cup granulated sugar
  • 4 large eggs
  • 12 oz. can Hershey's syrup (see note below)
  • 1 cup walnuts chopped, (pecans can also be used)
  • 1 cup UNBLEACHED all-purpose flour (bleached flour toughens baked goods)

FUDGE ICING:

  • 1/2 cup unsalted butter (1 stick)
  • 1/2 cup chocolate chips
  • 1 1/2 cups granulated sugar
  • 1/3 cup evaporated milk or use half-and-half or heavy whipping cream

Instructions

BROWNIES:

  • Cream butter and granulated sugar in a large mixing bowl with an electric mixer.
  • Beat in eggs.
  • Add syrup and beat again.
  • Add flour slowly; then increase speed until thoroughly mixed.
  • Stir in nuts.
  • Pour into a greased 11x17” jelly roll pan.
  • Bake at 350° for 30-40 minutes, or until a toothpick inserted in center comes out clean.
  • Add icing while still hot.
  • Cool brownies completely before cutting into bars.

FUDGE ICING:

  • Place butter, granulated sugar and milk in a medium saucepan.
  • Heat at medium stirring to dissolve ingredients.
  • Bring ingredients to a boil and boil for 1 minute.
  • Turn off heat.
  • Add chocolate chips.
  • Stir until smooth.
  • Pour hot icing over brownies as soon as they’re baked.
  • Spread icing with wet knife.

Notes

NOTE: The consistency of the brownies before baking is more like cake batter.

NOTE: The cans of Hershey’s syrup from the 70s and 80s used to be about 12-ounces. I substituted a 15-oz. bottle of Hershey’s Sundae Dream double chocolate syrup.
