Easy Baked Rice

This succulent rice dish is so easy to make. It uses only 6 ingredients and takes five minutes to prepare. It's perfect as a side for any Asian entree. It's also terrific with chicken, pork, beef or fish. Great casserole for company and holidays, too.

Equipment

  • 1 9x13" glass baking dish
  • 1 large mixing bowl
  • 1 wooden spoon
  • aluminum foil
  • chop sticks to serve, if desired
  • measuring cups

Ingredients
  

  • 1 1/2 cups basmati rice (I used Jasmati rice)
  • 16 oz. ctn. beef broth
  • 1 can French Onion soup
  • 4 oz. can sliced mushrooms drained
  • 1/2 cup unsalted butter melted (1 stick)
  • 1/4 to 1/2 cup parmesan cheese finely grated

Instructions
 

  • Combine rice, beef broth, French onion soup, mushrooms and butter in a mixing bowl.
  • Stir to combine.
  • Pour ingredients into a greased 9x13” glass baking dish.
  • Cover with foil and bake for one hour to one hour 15 minutes.
  • Sprinkle parmesan cheese over top (do not mix in), and bake about 5 minutes longer.

Notes

NOTE: The original recipe called for this casserole to bake in one hour. My oven took almost 1 hour 15 minutes before it was set enough to add the parmesan cheese on top.
 
NOTE: If you want to make this recipe gluten free, you will have to find a GF French Onion Soup online or make your own from scratch.
