These delicious brownies are filled with coconut and macadamia nuts. These use gluten free flour and coconut sugar for a healthier alternative to regular brownies.
1 1/2cupscoconut sugar(I only used one cup because that's all I had left)
2largeeggs
2tsp.pure vanilla extract
1 1/2cupsgluten free floursuch as Cup4Cup or Better Batter
1tsp. baking powder
1/2tsp.salt
2cupscoconutdivided use
4oz.macadamia nutscoarsely chopped, divided use
Instructions
In a mixing bowl, cream butter, sugar, eggs, vanilla, baking powder and salt; mix well with an electric mixer.
Add flour, 1 cup coconut and ½ cup macadamia nuts.
Spread into greased 8x12” glass baking dish.
Sprinkle with remaining coconut and chopped macadamia nuts.
Bake at 350° for 25-30 minutes or until golden brown.
Cool and cut into squares.
Notes
NOTE: I recommend a true gluten free flour blend rather than a gluten free pancake mix. My preference is Cup4Cup, but I have used several other kinds like King Arthur's, Pillsbury, Crusteaz and even the Great Value brand from Walmart that work really well for gluten free recipes.
