Funfetti M&M Cheesecake Brownies

These amazing cheesecake brownies are filled with peanut butter M&M's, rainbow sprinkles and a cheesecake filling. They start with a funfetti cake mix making them an easy and delicious treat that's great for tailgating parties. Also an excellent way to use up leftover Easter candy.

  • 1 11x17" jelly roll pan
  • 2 large mixing bowls
  • 1 wooden spoons
  • measuring cups

  • 1 electric mixer

Ingredients
  

COOKIE DOUGH LAYER:

  • 2 boxes Funfetti cake mix
  • 3 large eggs
  • 1 cup canola oil or use coconut oil or avocado oil
  • 2 cups rainbow sprinkles divided use
  • 20 oz. bag peanut butter Easter color M&M's (two 10-ounce bags)
  • 21 oz. container rainbow sprinkles (two 10.5-oz. containers)

CHEESECAKE FILLING:

  • 16 oz. pkg. cream cheese softened (two 8-ounce blocks)
  • 2 large eggs
  • 2 tsp. vanilla extract
  • 1 cup granulated sugar

Instructions
 

COOKIE DOUGH LAYER:

  • Stir cake mixes, eggs, and oil together with a wooden spoon until no lumps remain in the batter.
  • Add 1 container rainbow sprinkles and 1 ½ bags M&Ms.
  • Spray an 11x17" jelly-roll pan with cooking spray.
  • Press a thin layer of cookie dough about ½ to 2/3 of the mixture prepared baking dish; reserve remainder of cookie dough for topping.
  • Top with cream cheese filling.
  • Crumble remaining cookie dough over top of cream cheese layer.
  • Sprinkle remaining half bag of M&Ms and several tablespoons of rainbow sprinkles to cover the top.
  • Bake at 350° about 35-40 minutes or until toothpick inserted in center comes out clean.
  • Cut into 48 brownies.

CHEESECAKE FILLING:

  • Mix ingredients with an electric mixer.
  • Spread over top of crust layer.
