This amazing salad combines broccoli, bacon, peaches, pecans, grapes and red onion for spectacular flavor and crunch. Greek yogurt dressing is healthy, low calorie and gluten free.
3large headsbroccoli crownscut into bite size florets
1largepeachsliced or diced
1cupred grapesor green grapes, sliced in halves
1cupcraisins
1cuppecan pieces
1/3cupred onionchopped
4-6slicesbaconfried crisp and broken into small pieces
GREEK YOGURT DRESSING:
1cupplain Greek yogurtor use Icelandic yogurt
1/3cuphoney agave syrup or granulated sugar
2tbsp.apple cider vinegar
Instructions
SALAD:
Layer salad ingredients in serving bowl.
Refrigerate until ready to serve.
GREEK YOGURT DRESSING:
Combine salad dressing ingredients in a small bowl with a whisk and refrigerate until ready to serve.
Add Greek Yogurt Dressing just before serving to keep vegetables crisp.
Notes
NOTE: While it is best to not add the dressing onto the salad until just before serving, you can also mix the salad together and refrigerate for a couple of hours without the veggies becoming too soft.
NOTE: For a clean eating recipe, be sure to purchase bacon without nitrates and with the least amount of processing possible.
NOTE: I have not tried this recipe with monk fruit sugar, but that may also work if you're trying to stay away from sugar.
