BBQ Meatball Sliders will rock your world! These fabulous sliders are extra gooey with cheese, filled with BBQ meatballs, bacon and onions and served on King's Hawaiian Sweet Rolls for spectacular taste. Great for tailgating parties or sporting events like the Super Bowl, March Madness, NBA Finals or the Stanley Cup Playoffs!
Combine beef, shredded cheddar cheese, bread crumbs and egg in a large mixing bowl.
Form into balls and place on large cookie sheets.
Bake at 375° for 30 minutes or until cooked through.
Meanwhile, either fry or microwave bacon until crisp cooked.
Transfer cooked bacon to paper towel-lined plates to drain.
Break the bacon up into bite sized pieces.
In bacon drippings, sauté onion until softened.
To assemble: Cut Hawaiian Rolls in half.
Cut cheese slices in half.
Place rolls in the bottom of a lightly sprayed 9x13” glass baking dish.
Take each half/slice of cheese and fold in half and place on the top of each roll.
Add one or two meatballs on top of the cheese on each roll.
Brush meatballs with BBQ sauce.
Sprinkle meatballs with bacon and onions.
Place an additional half/slice of cheese over top of each meatball/bun.
Top each with the remaining cut sweet roll.
Cover with foil and bake an additional 15-20 minutes or until heated through.
Serve.
Notes
NOTE: There are actually enough meatballs to make at least 24 sliders.NOTE: I found it easier to place the bacon and onions on top of the cheese, then top with meatballs and brush with barbecue sauce.NOTE: Do not over-bake these sliders or they will get too brown on the bottom.
