This delicious casserole is great for holiday breakfasts or special occasion breakfasts like birthdays, anniversaries or anytime you want to serve a country breakfast.

Equipment

  • 1 9x13" glass baking dish
  • 1 sharp knife to cut vegetables and meat
  • 1 large mixing bowl
  • 1 whisk
  • measuring cups
  • measuring spoons

Ingredients
  

  • 12 slices wheat bread cut in triangles
  • 2 cups ham diced, fully cooked
  • 10 oz. pkg. broccoli frozen, chopped, and cooked and drained
  • 12 oz. pkg. sharp cheddar cheese grated
  • 6 large eggs beaten
  • 1 tbsp. minced onion or dehydrated onions
  • 3 1/2 cups 2% milk
  • 1/4 tsp. dry mustard don’t use any more than this or it gets too sharp
  • 1/2 tsp. salt
  • 1 tbsp. dried parsley for garnish
  • 1/2 cup sharp cheddar cheese shredded, for garnish

Instructions
 

  • Take half of bread slices and layer in a 9x13” greased baking dish.
  • Layer ham, then broccoli and 2 cups cheese.
  • Mix eggs, milk, salt and dry mustard in mixing bowl with whisk.
  • Pour over top.
  • Sprinkle with minced onion and parsley.
  • Top with remaining bread slices.
  • Sprinkle remaining 4-oz. cheese over top.
  • Cover.
  • Refrigerate 6 hours or overnight.
  • Bake uncovered at 350° for about 55-60 minutes.
  • Remove from oven and sprinkle with additional cheese.
  • Let stand 10 minutes before cutting.

Notes

NOTE: Can sprinkle an extra half cup of cheddar cheese over top last 5 minutes of baking.
 
NOTE: Preparation time does not include time required to refrigerate overnight.
 
NOTE: You can also place the top layer of bread on the dish after the broccoli and cheese and allow the egg mixture to saturate the bread by pouring it over top. The add minced onion, parsley and remaining cheese.
