Gluten Free Banana Bread Pancakes

Gluten Free Banana Bread Pancakes are outstanding! These delightful pancakes are reminiscent of eating a slice of homemade Banana Bread. They're made with bananas, walnuts and cinnamon. Then they're drizzled with maple syrup for a wonderful holiday or special occasion breakfast. Gluten free.

Equipment

  • 1 large skillet or griddle
  • 1 large mixing bowl
  • 1 wooden spoon
  • measuring cups
  • measuring spoons
  • 1 whisk

Ingredients
  

  • 2 cups gluten free flour (I prefer Cup4Cup)
  • 1 cup 2% milk
  • 1 tsp. cinnamon
  • 1/2 cup walnut halves plus more for garnish
  • 2 ripe bananas mashed
  • 2 large eggs
  • 2 tsp. vanilla extract
  • 1/4 cup coconut oil avocado oil or butter, for frying the pancakes
  • 1/2 cup maple syrup for garnish
  • 1 ripe banana for garnish, as desired

Instructions
 

  • Mash bananas on a plate with a fork.
  • Set aside.
  • Mix GF flour, milk, cinnamon, walnut halves, eggs, vanilla and mashed bananas in a large mixing bowl.
  • Whisk until well combined.
  • Heat griddle.
  • Melt coconut oil.
  • Pour out pancake batter to make 5 or 6-inch pancakes.
  • Cook on one side until bubbles form on top of pancake and the pancake is almost cooked through.
  • Turn pancake over and cook another minute or so until done.
  • Serve with freshly sliced bananas, walnut halves and maple syrup.
  • Yield: 10 pancakes.

Notes

NOTE: Coconut oil does tend to cause the pancakes to burn more quickly than using butter or avocado oil.
 
NOTE: I DO NOT recommend Pamela's baking and pancake mix for this recipe. In 2014 it was one of the few GF products available. There are many products with better taste, better consistency and that have a one-to-one equivalence (which Pamela's does not have). My personal preference is Cup4Cup.
