Pina Colada Cookies are sensational! These lovely cookies are reminiscent of Pina Coladas as they are filled with pineapple, coconut, candied cherries, almonds and vanilla chips. They're festive and beautiful cookies that are great for holiday baking, potlucks, or tailgating parties.
Stir with a wooden spoon until very well combined.
Roll dough into balls and place on greased baking sheets.
Bake at 350° for 15-18 minutes.
Rotate cookie sheets on racks every six minutes during baking time.
Cool completely.
Notes
NOTE: I was baking 5-8 racks of cookies at a time. If you're only baking one or two racks of cookies, your cookies may cook in less time.NOTE: If you wish for a flatter cookie, reduce the flour to 5 cups. Place the cookie sheets with cookie dough in the freezer for about 5-8 minutes before baking.
