Pina Colada Cookies are sensational! These lovely cookies are reminiscent of Pina Coladas as they are filled with pineapple, coconut, candied cherries, almonds and vanilla chips. They're festive and beautiful cookies that are great for holiday baking, potlucks, or tailgating parties.

Equipment

  • 4 18x26" cookie sheet pans
  • 1 large mixing bowl
  • 1 electric mixer
  • 1 wooden spoon
  • measuring cups
  • measuring spoons
  • 1 sharp knife to chop cherries
  • 1 spatula

Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup canola oil or use avocado or coconut oil
  • 1 cup granulated sugar
  • 1 cup powdered sugar
  • 6 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods
  • 1/2 tsp. salt
  • 1 tsp. cream of tartar
  • 1 tsp. vanilla
  • 1 tsp. coconut extract
  • 1 tsp. baking soda
  • 2 large eggs beaten
  • 1 cup crushed pineapple well-drained, patted dry (one 20-oz. can)
  • 1 cup premiere vanilla baking chips
  • 1 cup candied cherries chopped
  • 1 cup almonds sliced
  • 1 cup coconut

Instructions
 

  • Cream butter, oil and sugars, extracts, eggs, baking soda, cream of tartar and salt with an electric mixer until smooth.
  • Add flour, crushed pineapple, vanilla chips, candied cherries, almonds and coconut.
  • Stir with a wooden spoon until very well combined.
  • Roll dough into balls and place on greased baking sheets.
  • Bake at 350° for 15-18 minutes.
  • Rotate cookie sheets on racks every six minutes during baking time.
  • Cool completely.

Notes

NOTE: I was baking 5-8 racks of cookies at a time. If you're only baking one or two racks of cookies, your cookies may cook in less time.
 
NOTE: If you wish for a flatter cookie, reduce the flour to 5 cups. Place the cookie sheets with cookie dough in the freezer for about 5-8 minutes before baking.
