Healthy Lemon Poppyseed Dressing is a fantastic poppy seed dressing with a twist! This one incorporates lemon zest. This healthy version eliminates mayonnaise and sugar and substitutes Greek yogurt and honey for a dynamic, but healthier version of poppy seed dressing. It's terrific for any kind of company or holiday tossed salad recipe.
Place all ingredients in a blender and blend about 10-15 seconds until creamy.
Makes just over 2 cups dressing.
Notes
NOTE: This dressing has a very strong lemon taste. You may want to try it with 1/3 to 1/2 teaspoon lemon zest before adding more. Unless, of course, you prefer a strong lemony taste.
