Ten Grain Nut Bread

Fantastic bread machine bread using healthier ingredients than many recipes. This one has whole wheat flour, ten grain cereal, pecans and honey. The flavor and texture of this bread is wonderful. It's perfect for a country-style breakfast or as a dinner bread.

Equipment

  • 1 breadmaker
  • measuring cups
  • measuring spoons
  • 1 pastry brush to brush bread with butter after it bakes
  • 1 electric knife preferred, or sharp bread knife to cut bread
  • 1 nut chopper if nuts are not previously chopped

Ingredients
  

  • 1 2/3 cups hot water
  • 3 tbsp. powdered milk
  • 2 tbsp. avocado oil preferred over canola oil
  • 2 tbsp. honey
  • 2 tsp. salt
  • 1 cup whole wheat flour
  • 2 1/2 cups bread flour
  • 3/4 cup Bob’s Red Mill ten-grain cereal
  • 2/3 cup pecans chopped (measure after chopping)
  • 1 1/2 tsp. yeast
  • 4 tsp. vital wheat gluten

Instructions
 

  • Layer ingredients into bread canister in order given.
  • Set bread machine to whole wheat setting.
  • This will take approximately 4 hours.
  • Allow bread to rest 15 minutes before removing bread canister from oven.
  • Brush top and sides of bread with butter to prevent crusts from hardening.
  • Allow bread to rest an additional 15 minutes before cutting into slices.
  • Makes a 2-lb. loaf.
  • About 14 large slices.

Notes

NOTE: Since this bread is made without preservatives you will have to refrigerate it after a couple of days so it doesn't develop mold.
 
NOTE: all-purpose flour does not contain the necessary gluten to bond the ingredients together as well as bread flour. The bread may turn out crumbly. For best results use bread flour.
 
NOTE: I recommend using Fleischmann's yeast or bread machine yeast in any yeast bread recipe. Red Star yeast just doesn't work as well.
