Banana Walnut Bread

Banana Walnut Bread is a marvelous Banana Bread recipe using the breadmaker! This one is a yeasty home-baked bread using honey and cinnamon. It's not as sweet as a normal banana bread recipe, but the texture is light and fluffy instead of heavy. It tastes amazing and is delightful for breakfast or as a side for dinner.

Equipment

  • 1 breadmaker for a two-pound bread loaf
  • measuring cups
  • measuring spoons
  • 1 pastry brush to brush bread with butter after baking
  • 1 electric knife preferred, or sharp bread knife to cut bread
  • 1 nut chopper if nuts are not previously chopped
  • 1 small cookie sheet to toast walnuts
  • 1 toaster oven or regular oven to toast walnuts

Ingredients
  

  • 1 cup 2% milk
  • 1 cup banana mashed (I used 3 bananas which was a little more than 1 cup)
  • 1 large egg beaten
  • 3 tbsp. unsalted butter
  • 5 tbsp. honey or brown sugar
  • 1 1/2 tsp. sea salt or kosher salt
  • 1 tsp. cinnamon
  • 3 1/2 cups bread flour (NOT all-purpose flour)
  • 1 cup walnuts finely diced and toasted (measure after chopping)
  • 1 1/2 tsp. active dry yeast (Fleischmann's preferred)
  • 4 tsp. vital wheat gluten

Instructions
 

  • Layer ingredients in bread canister in order listed.
  • Select whole wheat bread cycle or allow the bread to bake at least 4 hours 30 minutes.
  • Allow bread to rest about 15 minutes in breadmaker before removing.
  • Brush top and sides of bread with butter to prevent crusts from hardening.
  • Allow bread to rest another 15 minutes before cutting down into slices.
  • Makes one 2-lb. loaf, or about 10 large slices.

Notes

NOTE: To toast walnuts, place walnuts in shallow pan and bake in toaster oven or regular oven at 350° for about 7-10 minutes or until walnuts are lightly brown. Add to breadmaker in order listed.
 
NOTE: Homemade bread has no preservatives so it needs to be refrigerated after 2 days.
 
NOTE: all-purpose flour does not contain the necessary gluten to bond the ingredients together as well as bread flour. The bread may turn out crumbly. For best results use bread flour.
 
NOTE: I recommend using Fleischmann's yeast or bread machine yeast in any yeast bread recipe. Red Star yeast just doesn't work as well.
