Peach Spice Cookies

These delightful cookies are filled with peaches and almonds, and flavored with cinnamon and cloves. Then they're frosted with a Lemon Buttercream Frosting. Perfect summer holiday treat when peaches are in season.

PEACH SPICE COOKIES: 1 stick unsalted butter softened to room temperature 1 cup light brown sugar packed 2 large eggs 2 1/2 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods 1/4 tsp. baking soda 2 tsp. baking powder 1/3 tsp. salt 1 tsp. cinnamon 1/2 tsp. ground cloves 1/2 cup almonds sliced 2 cups peaches peeled and finely diced LEMON BUTTERCREAM FROSTING: 4 tbsp unsalted butter softened 2 tbsp. lemon juice 2 tbsp. heavy whipping cream half-and-half or evaporated milk 1 tsp. lemon peel grated 3 cups powdered sugar
PEACH SPICE COOKIES: Mix butter, brown sugar, eggs, baking soda, baking powder, salt, cinnamon and cloves with an electric mixer until creamy.
Add flour, almonds and peaches and stir well to combine.
Using a ¼ cup cookie scoop, scoop out dough and place on greased cookie sheets.
Bake at 350° 12-15 minutes or until done.
Rotate cookie sheets on oven racks every seven minutes of baking time.
Cool completely.
Spread with Lemon Butter Icing.
LEMON BUTTERCREAM FROSTING:
NOTE: You can add a few sprinkles of freshly, grated lemon zest on top of the frosting, as well, if desired.
