Gluten Free Peach Surprise

This spectacular peach dessert uses fresh peaches. It is so wonderful no one will believe it's gluten free and vegan! This dessert uses oatmeal, coconut, hazelnuts and almond extract to increase the already marvelous flavor. It's terrific for summer holidays, backyard barbecues and potlucks.

Equipment

  • 1 9x13" glass baking dish
  • 1 mixing bowl
  • 2 wooden spoons
  • measuring cups

Ingredients
  

  • 2 cups oatmeal
  • 1 cup coconut oil
  • 4 1/2 cups fresh peaches
  • 1/2 cup granulated sugar
  • 1 heaping tbsp. cornstarch
  • 2 cups gluten free flour (see note below)
  • 1 cup water
  • 1 cup light brown sugar packed
  • 1 cup coconut
  • 1 cup hazelnuts chopped, (or your favorite kind) (measure after chopping)
  • 1 tsp. almond extract
  • 1 tsp. cinnamon

Instructions
 

  • Combine ½ cup granulated sugar, cornstarch and cinnamon in a saucepan over medium heat.
  • Add almond extract and water slowly to combine.
  • Stir in peaches.
  • Boil and cook over medium heat about 3-5 minutes or until thick.
  • Combine coconut oil with oatmeal, GF flour, brown sugar, and coconut.
  • Spread about 2/3 of the mixture into a greased 9x13” baking dish.
  • Spread peach filling over top.
  • Sprinkle nuts over top of the peaches.
  • Crumble remaining oat mixture over top of peaches.
  • Bake at 350° about 45 minutes or until hot and bubbly.
  • Serve warm with ice cream, if desired.

Notes

NOTE: Regular peach pie filling can also be used. Just add the cinnamon and almond extract to it and pour over top of crust layer.
 
NOTE: When I initially posted this recipe Pamela's baking mix was about the only GF flour readily available. Now there are many GF products available that have a much better flour blend and have a one-to-one ratio of GF flour to all-purpose flour. I have found that Pamela's flour is very thin so I have to use a lot more to get the same consistency as regular flour or other GF flours. My preferred blend is Cup4Cup.
 
NOTE: While I used hazelnuts, you can substitute pecans, walnuts, pistachios or almonds with great results.
