Carrot Raisin Salad is incredibly scrumptious. This fabulous salad is filled with carrots, raisins, marshmallows and pineapple. It's so quick and easy to prepare, making it a great recipe for backyard barbecues, potlucks, grilling out with friends or summer holiday menus. Gluten free.

Equipment

  • 1 large serving bowl
  • 1 grater for carrots, unless you purchase matchsticks carrots
  • measuring cups
  • measuring spoons
  • 1 vegetable peeler

Ingredients
  

  • 2 cups carrots grated
  • 1/2 cup raisins
  • 1/2 cup miniature marshmallows
  • 2 tbsp. mayonnaise I prefer miracle whip
  • 2 cups cool whip or other non-dairy whipped topping
  • 1-2 tbsp. granulated sugar
  • 5 oz. can crushed pineapple drained

Instructions
 

  • Combine all ingredients.
  • Chill well before serving.
