Trail Mix Bars are fantastic fruit-filled cookies. Hearty and delicious oatmeal bar includes dried pineapple, mango, papaya, figs, craisins, almonds, coconut and M&Ms. Just like eating trail mix, but in a bar-type cookie instead! Terrific dessert for potlucks, tailgating parties and grilling out with friends.

Equipment

  • 1 9x13" glass baking dish
  • 1 large mixing bowl
  • 1 wooden spoon
  • 1 electric mixer
  • measuring cups
  • measuring spoons
  • 1 sharp knife to cut dried fruits
  • 1 spatula

Ingredients
  

  • 2/3 cup unsalted butter softened
  • 2 1/4 cups light brown sugar packed
  • 3 large eggs
  • 2 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 2 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods
  • 3/4 cup old-fashioned oatmeal
  • 1 cup almonds sliced
  • 1 cup coconut
  • 1/4 cup dried papaya chunks finely diced
  • 1/4 cup dried pineapple rings finely diced
  • 1/4 cup dried sliced mangos finely diced
  • 1/4 cup dried cranberries
  • 1/4 cup dried figs stems cut off, finely diced
  • 1/2 cup M&Ms

Instructions
 

  • Mix butter, brown sugar, eggs, baking powder, and salt with an electric mixer until smooth.
  • Add flour, oatmeal, almonds, coconut, papaya, pineapple, mangos, cranberries, and figs.
  • Stir with a wooden spoon very well to combine.
  • Spray a 9x13” glass baking dish with cooking spray.
  • Spread dough into prepared pan.
  • Sprinkle M&Ms on top and gently press into batter.
  • Bake at 350° about 40-50 minutes or until a toothpick inserted in center comes out clean.
