Sausage Pepperoni Pizza Cups

Sausage Pepperoni Pizza Cups are phenomenal! These hearty and satisfying pizza appetizers are made with sausage and pepperoni. This quick and easy 5-ingredient recipe is great for tailgating parties, potlucks, holiday & New Year's parties as well as the Super Bowl. Equipment

  • 2 12-tin regular muffin tins
  • measuring cups
  • measuring spoons
  • 1 large skillet
  • 1 hamburger chopper
  • 1 Rolling Pin

Ingredients
  

  • 2 cans refrigerated biscuits 10 biscuits each can
  • 2 cups spaghetti sauce your favorite flavor
  • 3 oz. pkg. mini pepperoni
  • 1/2 lb. mild or hot pork sausage browned, drained and chopped in small pieces
  • 8 oz. bag Mozzarella cheese shredded

Instructions
 

  • Spray 20 muffin tins with cooking spray; set aside.
  • In a large skillet, fry sausage until no longer pink.
  • Use a hamburger chopper to break meat down into small pieces while frying.
  • Roll biscuits a few strokes with a rolling pin on the back of a plate.
  • Stretch the biscuits to fit into each muffin tin as well as possible to cover the bottom and sides.
  • Spoon 1 HEAPING tablespoon spaghetti sauce into each biscuit.
  • Place several small pieces of cooked sausage on top of the sauce, then place about 5-6 mini pepperonis on top of sausage.
  • Sprinkle Mozzarella cheese over top of each muffin tin.
  • Bake at 400° about 15-20 minutes until cheese melts and biscuits are lightly browned.
  • Do not overbake.
  • Allow to cool a minute or two before removing pizza cups from muffin tins.
  • Serve.

Notes

NOTE: I found it easier to roll the biscuits out slightly on the back of a plate. (Rolling out on a wood cutting board caused the biscuits to stick, but on the back of a Corelle plate worked great).
 
NOTE: Do your best to keep the cheese inside the muffin tin and not around the edges. Otherwise, it makes it more difficult to remove the pizzas from the tins.
 
NOTE: I used a regular table knife to gently ease around the outside edges of each miniature pizza to remove them from the pan.
