Almond Joy Cookies will knock your socks off! These amazing cookies are loaded with chocolate chips, almonds and coconut. If you like Almond Joy candy bars, you'll love these spectacular cookies! Terrific for holiday baking and Christmas cookie exchanges, tailgating parties or backyard barbecues.

Equipment

  • 4 18x26" cookie sheet pans
  • 1 extra large mixing bowl
  • 1 electric mixer
  • 1 wooden spoon
  • measuring cups
  • measuring spoons
  • 1 spatula

Ingredients
  

  • 1 cup unsalted butter softened
  • 1 1/2 cups granulated sugar
  • 1 1/2 cups light brown sugar packed
  • 4 large eggs
  • 3 tsp. vanilla extract
  • 4 1/2 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 5 cups chocolate chips (two and a half - 12-oz. bags of chocolate chips)
  • 2 cups sweetened coconut
  • 2 cups almonds chopped, (I used sliced almonds)

Instructions
 

  • Pre-heat oven to 375°F.
  • Spray cookie sheets with cooking spray.
  • In a very large mixing bowl, cream the butter, sugars, eggs, vanilla, baking soda and salt together with an electric mixer until well combined.
  • Stir in flour, chocolate chips, coconut and almonds and stir cookie dough until very well combined.
  • Roll dough into golf ball-sized balls and place on prepared cookie sheets.
  • Bake for 12 to 15 minutes or until done. (Mine took 17 minutes).
  • Rotate cookie sheets on oven racks every six to seven minutes of baking time.
  • Cool completely.

Notes

NOTE: You will need a very large mixing bowl to make this recipe.
 
NOTE: Each oven is different. My batches took 17 minutes to bake completely.
