This spectacular salad is terrific for Meatless Mondays or as a summer main dish salad. It uses romaine lettuce, black beans, corn, green onions, orange bell pepper and two kinds of tomatoes. Every bite is so mouthwatering you'll want more than one serving! This recipe also has a marvelous Cilantro Lime Dressing. Gluten free.
Creamy Cilantro-Lime Dressing or other dressing of choice
CREAMY CILANTRO-LIME DRESSING:
1bunchcilantrowashed
1/2cupplain Greek yogurtor Icelandic yogurt
3tbsp.honeyor more, if desired
1lime juice only
2large clovesgarlicminced
1/4cupolive oil
1 1/2tsp.white vinegar
1/2tsp.salt
Instructions
SALAD:
Finely chop romaine, bell pepper, tomatoes, and green onions.
Place all ingredients in a large bowl and mix with corn and black beans to combine.
Toss with desired dressing.
CREAMY CILANTRO LIME DRESSING:
Puree all ingredients in a blender or food processor until smooth.
Taste and adjust seasonings if necessary.
Makes about 1 ½ cups salad dressing.
Serve over top of Southwestern Chopped Salad.
