Tijuana Torte is an incredibly mouthwatering and irresistible Tex-Mex entree. This fabulous casserole is composed of ground beef filling with stewed tomatoes, tomato sauce, diced green chiles, taco seasoning--layered with flour tortillas, cheddar cheese, and sour cream. It's easy to assemble and so delicious to the taste buds. Great for week-night or company dinners.

Equipment

  • 1 10x15" glass baking dish
  • 1 large skillet
  • 1 hamburger chopper to break meat down in small pieces while frying
  • 1 spatula
  • 1 wooden spoon
  • measuring cups
  • measuring spoons
  • aluminum foil

Ingredients
  

  • 2 lbs. ground beef
  • 1 medium onion chopped
  • 2 15-oz. cans stewed tomatoes
  • 15 oz. can tomato sauce
  • 1 pkg. taco seasoning or Homemade Taco Seasoning
  • 4 oz. can chopped green chiles
  • 1 cup sour cream
  • 20 flour tortillas
  • 16 oz. bag sharp cheddar cheese grated (two 8-ounce bags)

Instructions
 

  • Brown beef and onion in large skillet until beef is no longer pink; drain.
  • Use a hamburger chopper to break meat down in small pieces while frying.
  • Add stewed tomatoes, sauce, taco seasoning and chilies.
  • Heat through.
  • Spray a 10x15” baking dish with cooking spray, then put about a half cup of the beef mixture on the bottom to keep flour tortillas from sticking.
  • Then layer tortillas, 1/5 of the beef mixture, sprinkle with about 1 cup cheese.
  • Repeat layers once.
  • Then layer tortillas, beef mixture and spoon the sour cream over all.
  • I just put really small dabs on. (Don’t use more than 1 cup as it won’t cook well).
  • Repeat with tortillas, beef and cheese two more times.
  • This makes 5 layers in all.
  • Bake, covered, about 25-30 minutes at 350°.

Notes

NOTE: You need to cover this when baking or the tortillas dry out.
 
NOTE: This casserole does NOT freeze well. The tortillas get really gummy and gooey when reheated after being frozen. You can reheat the casserole if it’s been refrigerated, but NOT frozen.
