Grilled Swiss, Tomato and Avocado Sandwiches

Teresa Ambra
Grilled Swiss, Tomato and Avocado Sandwiches are amazing. These delicious Grilled Cheese Sandwiches use Swiss cheese instead of cheddar. The addition of tomatoes and avocados make this sandwich utterly mouthwatering and the ultimate in comfort food. This is a wonderful meal to serve on weekends when you have busy sports schedules crowding out time in the kitchen. Good for Meatless Mondays too.

Equipment

  • 1 large skillet with a lid or griddle
  • 1 sharp knife to cut the vegetables
  • 1 spatula
  • measuring spoons

Ingredients

  • 2 slices artisan bread like Italian Texas Toast, or a thick-sliced and sturdy bread
  • 4 slices Swiss cheese two of the slices cut in half
  • 1 medium Roma tomato cut in 5 thin slices
  • 1/2 avocado peeled
  • 1/4 tsp. Salt and pepper to taste
  • 1/2 tbsp. unsalted butter

Instructions

  • Heat cast-iron skillet, regular skillet or griddle to low-medium heat.
  • Add butter and melt.
  • Spread two pieces of bread on a plate.
  • Place a slice of Swiss cheese in the center of each piece of bread.
  • Break remaining two cheese slices in half and place a half on each side of the bread overlapping the center piece of cheese.
  • Add the sliced tomatoes overlapping each other and spread across one of the slices of bread with cheese.
  • Add sliced avocado overtop of the tomatoes overlapping the edges.
  • Sprinkle generously with salt and pepper.
  • Place remaining piece of bread with cheese slices carefully over top.
  • Place sandwich carefully in cast-iron skillet, regular skillet or griddle and cover with a glass lid.
  • You will cook each side between 10-15 minutes over a low to medium heat.
  • With a spatula, carefully turn sandwich over so remaining side can brown lightly.
  • Cover with lid so cheese melts.
  • Cook an additional 10-15 minutes until done.
  • Remove sandwich with spatula to plate.
  • Cut in half to serve.

Notes

Yields: one really large sandwich – this would be enough for two servings for some people.

NOTE: If you have difficulty getting the cheese to melt, place sandwich on microwavable plate and microwave on high about 10-15 seconds or until cheese melts to your satisfaction.

NOTE: If you cook this sandwich on too high of a heat, the bread will scorch. Keep the heat low and cook more slowly. This also allows the cheese to melt better.
