Garlic Italian Sweet Potato Fries are outrageously good! This delicious side dish is a great accompaniment for any meat entree. It's healthy, low calorie, vegan and gluten free. Really a nice side dish casserole for family or company dinners.
1 10x15" glass baking dish (I actually used two dishes so the potatoes would be in a single layer; a large cookie sheet will also work)
1 sharp knife to cut herbs
measuring cups

1 pastry brush
1 spatula
Ingredients
2largesweet potatoespeeled (or four small sweet potatoes)
2-3tbsp.olive oil
1/3cupolive oil
Salt and pepperto taste
2large clovesgarlicminced
1heaping tablespoondried parsley
1/4cupfresh chivesdiced
1/2tsp.dried thyme
1/2tsp.dried rosemary
1heaping tablespoondried basil
1/2tsp.dried oregano
Instructions
Peel sweet potatoes and slice down into thin French fry-type wedges.
Place in a 10x15” glass baking dish that has been sprayed with cooking spray.
Brush with 2-3 tbsp. olive oil and sprinkle generously with salt and pepper.
Measure 1/3 cup olive oil into a glass measuring cup.
Add garlic, parsley, chives, thyme, rosemary, basil and oregano.
Stir to combine.
Brush potatoes with garlic-Italian seasonings mixture and spread out into pan as evenly as possible.
Cover with foil, and bake about 30 minutes at 400°.
Turn potatoes over with a spatula and bake uncovered until fork tender—about 5-10 more minutes.
Notes
NOTE: You can use fresh herbs for this recipe if you have them. I would use about ¼ cup fresh parsley, 1 tablespoon of thyme, rosemary, and oregano, and about 4 large basil leaves chopped.NOTE: If you are trying to eliminate extra oils, don't brush the potatoes with olive oil before adding garlic-Italian mixture.NOTE: I separated the potatoes and put them in two 10x15" glass baking dishes that had been pre-sprayed with olive oil cooking spray.
