Coconut Funfetti Cookies

Spectacular sugar cookie with coconut, coconut flavoring and loads of rainbow sprinkles. Awesome flavors and great for tailgating parties or holiday baking.

  • 1 box Pillsbury Golden Butter Recipe Yellow Cake Mix
  • 1/3 cup canola oil
  • 1 tsp. baking powder
  • 2 large eggs
  • 1 cup coconut
  • 1 cup rainbow sprinkles jimmies, not nonpareils
  • 1 tbsp. pure vanilla extract
  • 1 tsp. Adam’s coconut extract


  • Stir cake mix, flour and baking powder with wooden spoon.
  • Add eggs, oil, coconut, vanilla, coconut extract and sprinkles and stir until combined.
  • If dough is too moist add a little more flour.
  • Scoop with a small cookie scoop and place on cookie sheets sprayed generously with cooking spray.
  • Bake about 12-13 minutes or until done.
  • Cool.


NOTE: Some cheaper cake mixes don’t have the full amounts of dry cake mix and so you may need to add a little flour to make sure the cookies aren’t so gooey they will end up flattening out too much in the pan when they bake.
NOTE: I prefer the butter taste from the cake mix, but if you prefer a whiter cookie, than use a French Vanilla or Classic White Cake Mix.
