Gluten Free Pancakes with Blackberry Sauce

Gluten Free Pancakes with Blackberry Sauce is an awesome breakfast entree! These spectacular pancakes are great for any weekend, company or holiday breakfast. While the pancakes are gluten free, you can also make them with regular flour if you don't have gluten intolerance. They also have a delicious blackberry sauce served over top that will knock your socks off!

Equipment

  • 1 large skillet or griddle
  • 1 large mixing bowl
  • 1 whisk or wooden spoon
  • measuring cups
  • measuring spoons
  • 1 sauce pan

Ingredients
  

PANCAKES:

  • 1 cup gluten free flour (I prefer Cup4Cup) or use regular flour
  • 1 large egg
  • 3/4 to 1 cup 2% milk depending on how thick you want the batter
  • 1 tbsp. unsalted butter melted, or 1 tbsp. coconut oil or avocado oil
  • 1 tsp. vanilla extract

BLACKBERRY SAUCE:

  • 2 cups blackberries washed
  • 1/2 cup granulated sugar or honey
  • 2 tsp. vanilla extract
  • 2 tbsp. cornstarch
  • 1-2 tsp. water

Instructions
 

PANCAKES:

  • Whisk eggs, milk, butter (or coconut oil), and vanilla.
  • Whisk in gluten free flour (or use regular flour).
  • This mixture is very thick.
  • Thin with milk if you like a thinner pancake.
  • Spread a little bit of butter or coconut oil over hot griddle.
  • Cook on griddle until small bubbles start to appear on pancake.
  • Flip pancake over and brown on other side.
  • Serve with Blackberry sauce.

BLACKBERRY SAUCE:

  • Place blackberries, sugar (or honey) and vanilla in small saucepan.
  • Heat to medium and stir and cook about 5-10 minutes.
  • Mix cornstarch with water.
  • Stir into blackberry sauce to thicken.
  • Cook a few minutes longer.
  • Serve over top of pancakes.
  • Yield: 6 six-inch pancakes.

Notes

NOTE: The amount of Blackberry sauce is enough for double the recipe of pancakes.
