Equipment

  • 1 blender
  • measuring spoons
  • measuring cups
  • 1 large pronged fork
  • 1 gas or electric grill

Ingredients

  • 1/3 cup Tamari gluten free reduced sodium soy sauce
  • 1/2 cup extra-virgin olive oil
  • 1/3 cup lemon juice
  • 1/4 cup Worcestershire sauce
  • 1 1/2 tbsp. garlic powder (see note below)
  • 3 tbsp. dried basil
  • 1 1/2 tbsp. dried parsley flakes
  • 1 tsp. ground white pepper
  • 1 tsp. dried minced garlic
  • 1/4 tsp. hot pepper sauce

Instructions

  • Place all the ingredients in a blender.
  • Blend on high speed 30 seconds until thoroughly mixed.
  • If desired, poke meat with a large-pronged fork on both sides so marinade can absorb into the meat while marinating.
  • Place marinade in a mixing bowl.
  • Pour marinade over meat in a large bowl with lid.
  • Cover and refrigerate for a couple of hours or overnight.
  • Remove meat from marinade.
  • Shake off excess and pat down with damp paper towels to remove all the oil.
  • Grill meat as desired.
  • Great marinade for steak, chicken, pork or fish.
  • Makes about 2 cups marinade.

Notes

NOTE: While you don’t have to blend the ingredients in a blender it does infuse the oil with the other ingredients of the marinade. Since it chops up the herbs, more of the herb flavors better permeate the sauce. Those who used regular soy sauce thought the recipe was too strong. I really feel using the Tamari sauce made a huge difference.

NOTE: I suggest eliminating the garlic powder and dried garlic and using fresh or about a teaspoon of minced garlic from a jar.

NOTELea & Perrins Worcestershire sauce is gluten free. The original contains these ingredients: distilled white vinegar, molasses, sugar, water, salt, onions, anchovies, garlic, cloves, tamarind extract, natural flavorings, chili pepper extract.
