Parmesan Beets with Thyme

Tasty way to prepare beets. These are seasoned with thyme, lemon pepper and parsley, then sprinkled with parmesan cheese. Using a spiralizer on the beets makes them quite delightful in appearance and taste!

3 small beets peeled 1/4 to 1/3 cup Parmesan cheese grated, from a can 1/4 to 1/2 tsp. lemon pepper 1/4 to 1/2 tsp. dried thyme 1/4 to 1/2 tsp. dried parsley 1/4 to 1/2 tsp. pink Himalayan sea salt 1 tbsp. avocado oil or olive oil coconut oil cooking spray
Preheat oven to 350°.
Peel beets.
Put beets through a spiralizer with a thin blade.
Set aside.
Spray a 7x9” glass baking dish with cooking spray.
Spread beets into prepared dish.
Sprinkle with lemon pepper, thyme, parsley and salt.
Sprinkle about 2 tbsp. Parmesan cheese over top.
Bake for about 20-30 minutes or until lightly browned and beets are fork tender.
Sprinkle remaining parmesan cheese over top and bake again for about 5 minutes.
Drizzle with avocado or olive oil before serving.
NOTE: This recipe works better with a heavy duty spiralizer versus a hand-held veggie spiralizer.
